Snowshoeing and chocolate Mousse
Gourmet Cooking Classes, Cozy Lodging, Fine dining and Moonlight Snowshoeing
 
Arrive at The Allenspark Lodge Sunday night for orientation and a light dinner at The Fawn Brook Inn. Then relax at this favorite lodge which oozes with Colorado charm. In the morning after one of Juanita's world-famous breakfasts, begin three days of gourmet cooking classes with Herman and Meike Groicher and David Novic.
Classes will include:
- Correct Stock Preparation
- Hot Brown Sauces: Espagnol, Demi-glaze and it's variation
- Hot White Sauces: Fish Stock, Sauce Beure Blanc, Sauce Bechamel and it's variations
- Butter Sauces: Herbed Butters, Hollandaise, Sauce Bearnaise and it's variations, oils and vinegars
- Cold Sauces: Creme Fresh, Mayonnaise, Salad Dressings
- Desserts and Various Sweet Sauces, Tortes etc.
- How to properly prepare oven-roast foul such as Duckling
- Complete preparations for daily lunch and evening meal
- Proper preparation and presentation of tableside: Steak Tartare, Caesar Salad, Flambeing of Certain Red Meats
Dinner at night is not a normal sit-down, be served affair. No, no. It's much better. We start with an aperitif perpared with instructions by Meike. We then gather in front of the fire for a prize drawing each night. Dinner begins at the large square table and everyone is involved. Each course is a presentation with photos and cheers.
Monday Night: We will start the evening with aperitif and appetizers followed by a tradtional Swiss Fondue. After the meal, Phebe will guide an evening moonlight snowshoe trip for those who would like to participate. We'll return with rosy cheeks to Hot spiced wine and Chocolate Mousse.
Tuesday Night Menu:
- Aperitif
- Appetizer of Jumbo Sea Scallops, pan seared in garlic butter, served with Sauce Remolaude
- Cold Cream Apple/Blueberry Soup
- Main Course: Grilled Rocky Mountain Elk Filet garnished with locally produced goat cheese flamed with vodka and served with piquant blackberry pepper glaze
- For dessert we will indulge in Vienna's most famous Sweet Sacher Torte followed by coffee or an after-dinner cordial of Spanish/Irish Coffee
Wednesday Night Menu:
- Aperitif
- Steak Tartare properly prepared tableside. For those who don't wish to eat this delicacy
we will also have Smoked Salmon prepared Old-World Style
- Hot Cream of Asparagus Soup garnished with lemon shortbread
- Fresh Green Salad with House Vinaigrette
- Long Island Duckling served with delicately marinated cherry/Orange Sauce and Old-fashioned Potato Dumplings
- Dessert of Hot Apple Strudel with Vanilla Sauce followed by coffee and an after-dinner cordial
At the end of the day The Allenspark Lodge is just a short walk up the street below the mountains stars. The homey log lodge and the warm attention given by Bill and Juanita will make this week one to remember.
